Burritos with easy chili

Tasty food is even tastier when it is served in a practical format factor, that you can churn while watching some youtube video or having a chat in company. Added points if it can be stashed away in the fridge for a day and still be fresh later on. These burritos check every box, and you can make 8 for about €7.
Ingredients for 2 hungry people
- 8 dough tortillas (€2.40)
- 300-400g of sausage (~€2.50)
- 380g of beans (€0.70)
- 400g of tomato "polpa" sauce (€1.30)
- One little scalogno onion (~€0.10)
- Extra virgin olive oil
Preparation
- Start by heating up a small and tall pot. In the meantime remove the casing from the sausage, then put it in the pot.
- Wash the beans, then put them in the pot as the sausage got its searing.
- Roughly cut some scalogno onion, then add it to the mix, and pour olive oil.
- Add the tomato sauce and stir everything well. The key to this recipe is to get the tomato sauce to dry up to a gooey consistency. The denser the sauce is, the quicker our process will be. With my tomato sauce, I usually have it cooking around 40 minutes.
- Add some spicy peppers if you like.
- As the sauce is done start heating up the tortillas on a pan, one by one. As soon as it turns golden brown place it on a plate and procede with the following assembly
- lay a ladle full of chili on the tortilla.
- fold the tortilla to create a burrito.
- Repeat the previous step for every tortilla you assemble, then put every burrito into the pan to give them a last searing.
